Kathirikai (Brinjal) Kadayal Recipe

Kathirikai (Brinjal) kadayal is a easy breakfast recipe goes very well with Idli and Dosa. Here is the recipe with step by step procedure with pictures.

Kathirikai kadayal is almost same like tomato kadayal with some slight changes and with the addition of some more vegetables. Usually in our home there are so many brinjal haters. This recipe makes it very simple which makes everyone to eat it. This recipe can be made in very less time which makes it idle for breakfast.


There are also a recipe called kathirikai gotsu with slight modifications which also taste delicious like this. I will try to post that recipe soon. 

Ingredients for Kathirikai Kadayal Recipe:


  • Brinjal – 6 to 7
  • Onion – 1 medium size chopped
  • Tomato – 1 chopped
  • Potato – 1 small size chopped
  • Mustard seeds – ½ tsp
  • Garlic – 2 chopped
  • Turmeric powder – a generous pinch
  • Tamarind – small size
  • Coriander seeds – 1 tbsp coarsely grounded
  • Salt to taste
  • Curry leaves few
  • Coriander leaves for garnishing



Method:


  • Clean and chop the brinjal and immerse in water until use which prevents discoloration.
  • Keep cooker in the flame, add oil, add mustard seeds and allow to splutter then add chopped onions, curry leaves and saute for a minute.
  • Add coarsely grounded coriander seeds and saute for a minute.
  • Add chopped garlic.
  • Then add chopped potato.
  • Add chopped brinjal and tomato.
  • Add turmeric powder and mix well.
  • Add tamarind and mix well.  
  • Add water half way through the vegetables.
  • Close the lid and allow 2 whistles or untill all the vegetables are cooked well.
  • After the pressure releases, open the lid.
  • Using the wooden matthu, mash all the vegetables. If you not having the wooden tool you can use blender. While blending don't blend it too soft, just do it as shown in picture for better taste. I prefer to use wooden tool  compared to blender for better taste.
  • Serve with Idli and Dosa.
