Avarakai Poriyal Recipe - Broad Beans Stir Fry

Avarakai Poriyal Recipe(Broad Beans Stir Fry) is a very healthy recipe which can be prepared in very few simple steps which I explained with pictures below. It goes very well with lunch menu.



Ingredients for Avarakai Poriyal :


Avarakai (Broad beans) – ¼ kg
Coconut – 3 tbsp grated
Oil - 2 tbsp
Turmeric Powder – ¼ tsp
Chilli powder - 1 tsp(optional)
Salt to taste

To Temper:

Mustard Seeds – 1 tsp
Split Urad dal – 1 tsp
Channa dal / Kadala Paruppu – 1 tsp
Red Chillies – 2
Curry Leaves Few


Method:

  • Clean the vegetable and cut a single tip halfway and pull along with the string to the other end.  Cut into pieces as shown in the figure.
  • Heat oil in a pan. Add mustard seeds and allow to crackle. Add urad dal and channa dal. Allow it to slightly brown then add red chillies and curry leaves.
  • Add chopped Avarakai and fry for a minute.
  • Add turmeric powder, chilli powder(optional) and mix well. Sprinkle some water and allow it to cook until soft. After it is completely cooked add grated coconut and switch off the flame and mix well. 

Note:

  • You can also steam cook the broad bean and follow the same procedure. Only change, there is no need to cook the beans in the procedure once again.
