Jackfruit Payasam Recipe - Chakka Pradhaman (Onam Recipe)

Jackfruit Payasam is also popularly known as Chakka Pradhaman in Kerala. We make this recipe during jackfruit season. It taste delicious and the aroma fills the kitchen whilst its preparation. Here I am sharing this recipe with step by step procedure along with pictures.

Jackfruit payasam can be prepared in different ways. Here I prepared this recipe using coconut milk and condensed milk. Other way is you can skip coconut milk and add regular milk, condensed milk. But for rich flavor I prefer coconut milk. Sometimes I add all the three milks.

Ingredients for Jackfruit Payasam:

  • Jackfruit – 12 to 15 pieces
  • Sugar – ½ cup
  • Condensed milk – ¼ cup
  • Milk – ¼ cup (optional)
  • Coconut milk – ½ cup
  • Coconut bits – 2 tbsp
  • Ghee – 2 tbsp
  • Cashews few
  • Dry grapes few

Method:

  • Cut jackfruit pieces into small pieces
  • Reserve some small pieces for latter use, add remaining pieces to a cooker add little water and allow 2 whistle or until soft
  • Allow to cool completely and blend it soft using a  blender.
  • Add remaining piecies in a kadai add little water and allow to cook.
  • Mean while add sugar in a heavy bottomed vessel, add 1/4 cup water and allow to boil until sugar syrup starts thickening.
  • After jackfruit becomes slightly soft add this sugar syrup to that and allow to cook for a minute.
  • Add jackfruit pulp we blended and allow to boil for some time. Then add condensed milk and milk (if you adding) and mix well and allow to cook for a minute.
  • Add coconut milk and allow to cook for a minute or two in a low flame.
  • Add ghee to a kadai and fry cashew, dry fruits and add it to the payasam.
  • Fry coconut bits in the same ghee and add it to the payasam.
  • Serve Warm.

Note:

  • While you preparing sugar syrup, after sugar got dissolved you can strain it to remove impurities.
  • Dont boil after adding coconut milk it will ruin the payasam.
