Puli Rasam is also called as Tamarind Rasam or Puli Saaru which we always make when we got bored of normal rasam and sambar recipe. This is also delicious as parupu rasam. Here comes this recipe with step by step procedure along with pictures.
Ingredients for Puli Rasam:
- Tamarind – amla size
- Water as required
- Turmeric powder – a pinch
- Rasam powder – 1 tsp
- Coriander powder – 1 tsp
- Chilli powder – ¾ tsp
- Salt as required
To Temper:
- Oil – 2 tbsp
- Mustard seeds – ¾ tsp
- Cumin seeds – ¾ tsp
- Coriander seeds – few
- Garlic – 2 crushed
- Small onions – 2 crushed
- Red chilli - 1
- Asafetida a pinch
- Curry leaves few
Method:
- Soak tamarind in 11/2 cup to 2 cup of warm water and extract a pulp.
- Add salt and turmeric to the tamarind extract and mix well.
- Add rasam powder, coriander powder, chilli powder and mix well.
- Heat oil in a pan and add all ingredients under the list 'temper'. And add it to the tamarind extract and keep it in stove and allow to boil until raw smell goes. Garnish with coriander leaves.
Note:
- You can also add one tomato after tempering and add to the tamarind extract and allow to boil.
- Rasam color will vary according to the consistency of tamarind extract and also depending upon new or old tamarind used.
