Puran Poli Recipe - Oputtu (Bobbattu) Recipe

Puran poli (oputtu) is a delicious sweet recipe done mostly during festive season. Here I am giving you this recipe with step by step procedure along with pictures.

Puran poli is very popular sweet recipe in number of states in India. This recipe is called in different names in different states. In Tamilnadu it is called as Poli.

This will be prepared by stuffing sweet dal inside maida. The stuffing is prepard usually with channa dal and jaggery. The outer layer is prepared by maida or whole wheat flour. Using maida will be easy to make it as round and poli will be lighter in color and soft as compared to whole wheat flour. But whole wheat flour will also give a good taste as maida. Always try to make this in a iron dosa pan other than making it in nonstick pan to get soft poli.

In our home we usually make this recipe in all festive occasion and whenever guest arrives for lunch. We also make different version of poli. I will try to post all versions soon. 

We usually have this poli by mixing it with honey and banana or simply with ghee.

Ingredients for Puran Poli recipe:


Ghee or oil for frying the poli

For stuffing:


Channa dal – 1 cup
Jaggery – ¾ cup
Cardamom – 3 to 4
Salt – less than a pinch

For Outer Layer:

Whole wheat flour – 1 cup
Water as required
Oil – ¼ cup


Method:


For outer layer:


  • Take a cup of whole wheat flour in a vessel. (You can use maida also)
  • Add required water and make the dough softer than the chapathi dough .
  • Kneal the dough nicely and add 1/4 cup of oil to it and allow to rest for 30 minutes.

For stuffing


  • Wash and soak channa dal for 15 minutes and allow it to cook by adding water until it is 90 percent cooked.
  • After it is cooked transfer it to colander and allow the water to drain completely.
  • Grate jaggery and measure that to 3/4 cup.
  • Add cardomom and dal (water should be completely drained) in the grinder or mixer and allow to grind for few minutes then add jaggery little by little. If the mixture becomes too watery stop adding jaggery as this will spoil the consistency. 
  • Grind it to the smooth paste as shown in the figure.

For Preparing Puran poli:


  • Make the stuffing into round balls.
  • Take amla size wheat dough and spread it in the banana leaf as shown in the figure.
  • Place the stuffing ball at the center and cover it. Take only little quantity of wheat dough inorder to thinly cover the stuffing placed at the center. If we keep too much wheat dough it will make the poli hard and taste less.
  • After completely covering the stuffing, using palm or fingers gently press and make it to the round shape.
  • Heat dosa pan. Add some oil and place the banana leaf along with poli over the iron pan and gently shift the poli into the pan as shown in the photo.
  • After cooking one side flip it to the next side and allow it to cook.
Serve with ghee or with banana and honey.

Note:


  • While grinding keep check on consistency or else you will not get perfect poli.
