Lemon Rice Recipe - Elumichai sadham


Lemon Rice is a very easy lunch recipe which is very light and tasty. Here I explained it by step by step procedure with pictures.

Lemon rice can be easily prepared by the left over rice also. It is a most suitable lunchbox recipe and also we can take it as a picnic food. For lunch this can be paired with curd rice, pickle and papad.

Ingredients for Lemon Rice:

(Serves 2)

  • Rice – 1 cup cooked
  • Lemon – 1
  • Oil – 2 tbsp
  • Mustard seeds – ¼ tsp
  • Split urad dal – 1 tsp
  • Channa dal / Kadala paruppu – 1 tsp
  • Green Chilli – 1 finely chopped
  • Cashew Nut – few
  • Peanuts – 2 tbsp
  • Hing a pinch
  • Curry leaves 5 nos
  • Salt to taste
  • Coriander leaves finely chopped


Method:


  • Heat oil in a pan and add mustard seeds and allow it to crackle, add channa dal, split dal, cashew, peanuts, chilli, curry leaves, hing, salt and allow it to slightly brown. 
  • Add turmeric powder and mix well. Switch off the flame. Allow the cooked rice to cool completely by adding little oil. I usually add 3 cups water for 1 cup rice but for this rice I add 2 cups of water for 1 cup  of rice. After its cooled completely add the tempered items to the rice and add lemon juice and mix well. Alter the salt. Garnish with coriander leaves.
     Pair this with curd rice, pickle and papad.

Note:

  • Dont serve it immediately give some time so that flavor will get mixed.
  • Cook the rice with less water than usual so that the rice will not be sticky.
