Green Beans Paruppu Usili Recipe / Green Beans and Lentils Stir Fry

Beans Usili is very healthy and easy recipe. Here I give this recipe with step by step procedure along with picture. We usually have it for lunch along with Rice and Kulambu(gravy).

Ingredients Beans Usili Recipe:

Beans – 2 cup
Salt to taste

To Grind:

Channa dal (Kadalai paruppu) - 1/4 cup
Toor dal (Thuvaram paruppu) – 1/8 cup
Red chilli – 2
Salt to taste

To Temper:

Mustard seeds – ½ tsp
Urad dal – ½ tsp
Channa dal – ½ tsp (optional)
Curry leaves – few
Red chilli – 2
Oil – 2 tsp

Method:

  • Wash the beans and chop finely and keep aside. Soak channa dal and toor dal for 1 to 2 hours, drain the water completely using the strainer and leave it in the strainer so that remaining water will also drain. Place the chopped beans in the streamer plate of the idli cooker and allow it to cook (you can also simply cook by adding water).
  • Check whether it is cooked and keep it aside. Now add red chilli to the drained dal in a mixie jar. Grind it to a coarse texture without adding water.
  • Make it to small balls and place it in the steamer plate of the idli cooker and allow it to cook. After it is cooked and slightly cooled place that in the mixie jar and scramble (you can do it in a hand, to get it in even size and to do it easily I am using mixie) as shown in the figure (Just pulse 2 to 3 three times in a mixie to get the texture as shown in the figure. Dont run the mixie continuously)
  • Heat oil in a pan add mustard seeds and allow to crakel, add urad dal, channa dal (if adding) allow it to slightly brown then add red chilli and curry leaves.
  • Add cooked beans and required salt and fry for a minute then add scrambled dal and mix it well. After it is mixed well switch off the flame.
Serve with curry or rice....

Notes:

  • You can use dal in proportions according to your preference.
