Keerai Poriyal - Greens Stir Fry

Keerai poriyal is a very healthy recipe. I used thandu keerai for making this poriyal (stir fry). You can use this cooking method with other type of greens like vendhaya keerai (fenugreek leaves),Ponnanganni keerai 
(Dwarf copper leaf) etc . I also make vendhaya keerai  potato poriyal  which tends to be a good combo. 



Ingredients:

  • Keerai – 1 bunch
  • Onion – 1 finely chopped
  • Coconut – 3 tbsp grated
  • Garam masala powder - 1 tsp(optional)
  • Red Chilli powder - 1 tsp
  • Salt to taste
  • Sugar – a pinch

To Temper:
  • Mustard Seeds – 1 tsp
  • Split Urad dal – 1 tsp
  • Channa dal / Kadala Paruppu – 1 tsp
  • Red Chillies – 1



Method:

  • Clean the greens and wash it and cut the greens and keep aside.
  • Heat oil, add mustard seeds allow it to crackel then add urad dal and channa dal allow it to slightly brown. then add red chillies, onions and saute till onion become slightly brown. Then add greens.
  • Reduce the flame and stir until greens reduced in volume then add salt. Add a sugar. Greens itself will let out water it will be sufficient for it to get cooked, if it is not sufficient sprinkle some water. Add chilli powder, gram masala powder. Once the greens gets cooked switch off the flame and add coconut.


Notes:

  • While washing the greens soak it in water for 15 min by adding 1 tsp of rock salt to remove impurities.
  • Sugar is added to retain the color of the greens while cooking
  • I add gram masala powder it will add taste. You can add according to your preference its purely optional.
