Here I am presenting Indian style Fried rice recipe with stepwise picture. This recipe is supposed to be little conventional with Indian twist. There are also different version like mushroom fried rice, schezwan fried rice.
Ingredients:
Serves – 2
Basmati rice – 1 cup cooked
Carrot – 1
Beans – 10
Peas – ¼ cup
Capsicum – 1
Large onion – 1
Ginger Garlic paste – 1 tbsp
Garam masala – 1 tsp
Coriander powder – 1 tsp
Red chilli powder – ¼ tsp
Oil – 2 tbsp
Bay leaves - 1
Cinnamon stick – ½ inch
Cloves – 2
Green Chilli – 2
Salt to taste |
Method:
- Chop the onion lengthwise and chop carrot and beans into small pieces and keep aside.
- Heat oil in a pan and add bay leaves, cinnamon stick, cloves, green chilli and saute for a minute and add onions and saute for a minute or less and add ginger garlic paste and saute till raw small goes.
- Add chopped carrot, beans and peas. Mix well and add water and allow the vegetables to cook. After it is cooked for about five minute add garam masala, chilli powder, coriander powder and salt and allow vegetables to cook. Add capsicum when the vegetables are almost cooked this will prevent the capsicum from over cooking. Switch off the flame when vegetables are cooked.
- Place the cooked basmati rice in a vessel and add the cooked vegetables to the rice and mix well. Serve warm.
Notes:
- You can add any vegetables according to your preference.
- After you cooked the rice if you feel its sticky put the rice in a big plate and drizzle little oil and mix after sometime will make the rice non sticky.
- You can also cook the rice by adding a tsp of oil. If you doing like this you can omit the previous method.
- Add 1/4 tsp sugar while cooking vegetables to retain color.
