Sprouts Vegetable Salad

Sprouts vegetable salad is very simple recipe with the goodness of sprouts and different vegetables. I usually make this salad for breakfast along with my usual dishes. Here I am giving my colorful healthy salad recipe.


Including  various vegetables in salad which provide lots of fiber without adding calories and fat. Choose vegetables of different colors especially darker colors which will contain more vitamins and minerals. Adding sprouts is the good way to increase the intake of protein. I usually use homemade sprouts because its fresh and hygienic.



Ingredients for sprouts vegetable salad:


  • Green gram Sprouts – ½ cup
  • Carrot – 1 grated
  • Cucumber – 1 grated 
  • Raw Mango – ½ grated
  • Extra virgin olive oil - 1 tbsp
  • Tomato – 1 finely chopped
  • Onion – 1 finely chopped
  • Cabbage shredded – ¼ cup
  • Avocado – 1
  • Lemon – 1 small size
  • Sugar – 1 tsp
  • Freshly ground pepper – 1 tsp
  • Thousand Island sauce – 3 tbsp
  • Dried Herbs – 1 tsp
  • Salt to taste

For Garnishing:

  • Mint leaves few finely chopped
  • Coriander leaves few finely chopped
  • Beetroot 4 tbsp grated

Method:

  • Mix all the items in the ingredients list. 
  • Keep it in the refrigerator for 30 minutes so all the flavors will get incorporated.
  • While serving garnish with the items under garnishing list.

Note:

  • Always use fresh vegetables.
  • You can add any vegetables of your choice.
  • I used beetroot only for garnishing because it will change the color of the salad. If you want you can add beetroot as one of the ingredients.
  • I usually grate the cucumber and filter the juice and I use the juice for some other purpose.
